Corn Muffins

Ingredients
2 eggs
2/3 C. milk
1/3 C. plain yogurt
2 Tbsp. canola/olive oil
1/2 C. brown rice flour
1/2 C. cornstarch or potato starch or soy flour or sorghum flour
1 C. corn meal
3 tsp. baking powder
1/2 tsp. salt.

Directions
Preheat oven to 400.

Whisk eggs, milk, yogurt and oil. Add flour, corn meal, baking powder and salt. Whisk until completely mixed. Spray muffin tins with cooking spray. Fill and bake for 20 minutes.

Makes 12 muffins.
