Chicken Nuggets

Ingredients
2 cloves chopped garlic
1 Tbsp. fresh parsley
1/2 GF bread crumbs
1/2 GF all purpose flour
1/4 tsp. red pepper flakes
1/4 C. parmesean cheese
1/4 C. canola oil
2 eggs
1 lb. chicken breast cut into nugget size pieces

Honey Mustard Sauce:
1 C honey
1/4 C dijon mustard

Directions
In a food processor blend chopped garlic, parsley, bread crumbs, flour, red pepper flakes and parmesean cheese. Place the mixture on a plate.

In a separate bowl whisk 2 eggs.

Dip the chicken pieces in the egg and cover them with the bread mixture.

In a frying pan add the canola oil and turn the heat to medium high. Once the oil starts to heat up turn it to medium. Add the breaded chicken and cook until golden, about 5 minutes. Turn over and cook for a few more minutes. Serve with honey mustard sauce.
