Ingredients
1 15 oz can Black Beans
3 tablespoons canola oil
1 tablespoon plus 1 teaspoon cumin
2 to 3 teaspoons mild chili powder (to taste)
1 8-ounce can tomato sauce
Salt to taste
6 ounces medium or sharp white cheddar cheese, grated
12 to 14 corn tortillas
1/2 cup chopped walnuts (optional)
Chopped cilantro for garnish
Fresh salsa for serving
